I’ve made a decision about pastry school, and while I know it would be a blast, I’m not going. I’ve done my homework and talked to about a half dozen chefs and pretty much everyone agrees that unless I want to work in a top rated restaurant (which I don’t), there is no need for a $30,000 pastry school education. In fact, all of them recommended going to a bakery and asking if I could intern there for free on the weekends and gain real world experience that way. I’ve also been told the hours suck, there are usually no benefits, no sick and no vacation days, and $12/hour is generous. And that’s that. The plan is to take some inexpensive classes locally so I can learn proper technique, try to intern, get a job to pay the bills (anyone need a writer come April?), and get my baking business really going.

The girl that does my eyebrows gave me a hard time about Katsuya guy and thinks I should give him another chance. He’s been out of town but is back this week so I need to figure out if I want to go out with him again. He’s very nice, but we just had nothing to talk about. I know, I know, maybe he was nervous.

I tried on a pair of jeans that were hidden in the back of my closet and realized am the fattest I have been in years. It’s time to start eating properly and exercising regularly again. Sigh.

In blog news, I’m thinking about making it private. I’m still not exactly sure how I go about doing that, but once I figure it out, I’ll let you know.

I think that interning is a GREAT idea! But don’t let them talk you into making a baby cake like that one. ICK!

And there’s still a lot of time between now and April, so don’t panic.

I gather there’s some behind-the-scenes action that is prompting you to consider making your blog private? Ugh. Sorry. :(

I usually use the first date to screen whether or not someone seems sane and kind and thoughtful. I figure that it is possible that someone might be nervous, and attraction might develop as long as you can respect a guy. Best of luck to you!

If you just want to make your blog private from prying eyes, you can have a private blog for invited readers only just like my friend has. You get a page like this when you log on:

Wait! I got it! You use this cake in Bible study to help illustrate a story about King Solomon. YOu know, the one where two mothers claim the same baby, and Solomon offers to cut the baby in half to see who falls for this logic. After the lesson, the cake can be a “prize” in class!

Don’t blame yourself on the jeans. Obviously, they have been washed a lot and therefore shrunk too much! THAT’S the ticket!

On a more serious note, I agree with you on the bakery thing. Keep your day job while you “learn the business,” so to speak. Just curious, will this new commitment cut too much into your other volunteer work/social time?

Sounds like a good decision! And it just occurred to me, why would someone who bakes such lovely and interesting things need to spend that kind of time and money in pastry school anyway when some interning time on the weekends is more than enough to top up all of the stuff you already know.

You are following your heart and dreams and that is the important thing.

What? Private blog? No pastry school? And no job? Wha’?! This is making me nervous. I thought there was a plan?

Well, I hope that somehow you open a very posh bakery with some sort of miracle funding, and we can all come to buy sweets. We will send all our friends as well. Of course, we want to be invited to the Grand Opening 2009.

Maybe you could start designing the “shingle” to hang out front, or the landmark sign now. Just make it happen, right?

Interning is a good idea. I, conversely, have decided to go back to school. Either USC or UCLA depending on which of the two programs I decide I am more interested in. I need a recession=proof career. Also I don’t see myself writing radio spots when I am 60, but HS Guidance Counselor? Director of Libraries? Perhaps…

I agree interning sounds like the way to go with the baking & pastry options. And yes, we know the school would not be viable already knowing about the miserable typical salaries for the ‘chefs’ here. I hate that you feel the need to take the blog private. It’s always a tough slog though, and it’s understandable. Many of the blogs I used to follow have gone ‘dark’ or private. I usually don’t feel like a close enough ‘friend’ to be invited, so I just move on. It’s probably why I’ve got no Facebook account either.

On the job front Every single Occupational category followed by the Dept of Labor has been losing both jobs and average Income since Bush waltzed into office. That’s Never happened before, except during the Great Depression. The only exception was for ‘professional degrees’ Doctors & Lawyers & such. But even their incomes (on average) have barely kept up with inflation.

So there really are very few ‘recession proof jobs’ & careers. You just need to resign yourself to some serious retraining almost every 10 years of your working life. Yes, even the Docs too. And you’ll still be running behind then still! (EPI.org).

So this is one reason why to go private, to hide from the likes of me spreading the good news on the economy. (Cepr.net, tcf.org). Cheers & Good Luck! ‘VJ’

Very exciting about your job plans. I have 2 friends — both in their forties — making epicurean career changes; one toward pastries, the other as a chocolatier (I love this word enough to have double checked my spelling!). FWIW, they are 2 of the most interesting women I know.

I am a casual reader of your blog, but I love it. Can I still read it if it is private? I never make snarky comments.

On another note, jeans are very unforgiving. I am constatnly trying on old ones to gauge my weight, it is far more indicative than a scale. Sorry, and I totally know the feeling, about a year ago everything was to tight…….I finally got it together.

I always stop in on this blog when I visit your baking blog to find a recipe to satisfy a sweet tooth, since I too, am a 30-something singleton in LA…. I wonder what it would be like if I had my personal life for others to see. While it’s an interesting voyeuristic peek into someone else’s life, I don’t know if i could do it and would understand why you’ve decided to make it private.

But the baking blog will stay public, right, right?? Don’t make me nervous…
